This may sound weird but it looked quite cool. How this came about was ..I was trying to get the 'perfect' fried egg for a photo but the first two didn't turn out the way I wanted so just as the white had set I poured them into a bowl to continue with my egg quest.
As I had no intention of wasting the partially fried eggs, I whisked them up a bit with a fork, added some seasoning and cooked as an Omelette.

Ingredients
2 eggs

1. Heat some oil in a frying pan over a medium-high heat until hot, crack eggs into pan and fry until white is almost cooked. Transfer into a bowl. Whisk gently with a fork, season with salt and pepper.
2. Heat oil or butter in a small frying pan, swirl oil/butter around base and sides of pan. Turn heat down, pour egg into pan and cook until set. I didn't flip mine over, instead I place a lid on the pan and turned off the heat, the steam cooked the top of the omelette.
Feel free to add toppings.
