Champit tatties is the Scottish word for mashed potatoes. My gran used it all the time.
Adding spring onion just takes plain mashed tatties to a whole new level of yumminess.
Ingredients
8 medium potatoes, peeled, quartered
bunch spring onions
1/4 pint milk
salt & pepper
knob of butter
Method
1. Boil potatoes in salted water until tender but still firm. Drain, return to heat to dry slightly, shaking pan to prevent potatoes sticking.
2. Meanwhile, finely chop both white and green parts of the spring onions.
3. In a small saucepan, heat the milk, butter and spring onion gently until butter has melted.
