Homemade Roasted Peanut Butter


Seriously I would never have thought that homemade peanut butter would be easy and quick to make never mind the fact that it tastes loads better than store bought.


Cerys has this insatiable love affair with peanut butter, she would eat it every day all day long if she could. I have seen many recipes on making peanut butter so thought I would give it a go myself. I liked the sound of this recipe found here and it did not disappoint. 




Get the kids involved in making the peanut butter.


All you need is 4 simple ingredients and a food processor or blender. 2 cups of pre-roasted peanuts or raw shelled peanuts and roast them yourself for 10 minutes until glossy and golden looking, I bought the roasted peanuts in shells and removed the shells and skins, I also gave them a few minutes in the oven to help release the oils.




Homemade peanut butter won't be quite as smooth as store bought but my kids like some crunch and texture to their peanut butter.


Ingredients

2 cups raw or pre-roasted peanuts, shelled
1/2 tsp salt
2 tbsp peanut oil
1-2 tbsp honey

1.  Pre-heat oven to 180°C. Line a baking sheet with parchment paper. If roasting from raw bake nuts for about 10 minutes or until golden brown and glossy with oil, if the peanuts are already roasted bake for 3-4 minutes, just to heat them up and help release the delicious oils.

2.  Transfer peanuts to a food processor with blade attachment. Pulse a few times until roughly chopped.. For crunchy peanut butter, remove 1/2 cup of chopped nuts and save for later.

3.  Process for 1 minute continuously. Stop, scrape down sides and bottom of bowl.

4.  Process continuously for another minute, stop to scrape sides and bottom of bowl. The peanut butter will be starting to clump together.

5.  Process again continuously for another 1 minute, stop, scrape sides and bottom of bowl, it should be looking more like thick peanut butter.

6.  Add salt, oil and honey. Continue processing for 1-2 minutes until it becomes smooth. If you have reserved some of the chunky peanuts, add this now, pulse a few times to incorporate.

7.  Transfer peanut butter to a storage jar, cover and refrigerate, it can be used immediately.




Enjoy straight from the jar or spread on fruit, crackers or toast.

Aussie Pie Floater

With Australia day fast approaching, I had to share this Aussie icon. The pie floater is a meat pie submerged in thick pea soup, the pies are traditionally turned upside down sitting or sometimes submerged in the pea soup.
