Every weekend I get a request to make pancakes. I have made a variety of different pancake recipes over the time. This one I slightly adapted from taste Australia found here. They were deliciously tasty, everyone loved them.
Ingredients
1 1/2 cups milk
2 eggs
2 tsp vanilla extract
2 cups self-raising flour
1/4 tsp bicarbonate of soda
1/4 cup sugar
25 g butter, melted
Method
1. Whisk milk, eggs and vanilla together in a jug. Double sift flour and bicarbonate of soda into a large bowl. Stir in sugar. Make a well in the centre. Add milk mixture. Whisk until just combined.
2. Heat a large non-stick frying pan over a medium heat. Brush pan with butter. Using 1/4 cup mixture per pancake, cook for 3-4 minutes or until bubbles appear on the surface. Turn and cook for a further 2-3 minutes. Transfer to a plate. Cover loosely with foil to keep warm. Repeat with remaining batter.
Serve warm with butter or maple syrup.
Pancakes are wonderfully simple to make, all we need is mainly 3 simple ingredients eggs, flour and milk and with these ingredients, you add vanilla extract, bicarbonate of soda and butter.
